Cream Cheese Mashed Potatoes

Serves: 8 to 10

Ingredients

  • 1.4 kg (3 lbs) Yukon Gold potatoes, peeled and cut into chunks
  • 225 g (1/2 lb) cream cheese, softened
  • 180 ml (3/4 cup) SKOTIDAKIS 2% plain Greek yogurt
  • 2 eggs
  • 125 ml (1/2 cup) green onions, chopped
  • 15 ml (1 tbsp) melted butter
  • 15 ml (1 tbsp) fresh parsley, chopped
  • Salt and pepper

Directions

  1. Preheat oven to 180°C (350°F).
  2. Bring a large pot of salted water to a boil and cook potatoes around 15 minutes or until tender. Drain and mash.
  3. In a bowl, mix cream cheese, Greek yogurt, eggs, green onions, butter, parsley, salt and pepper until smooth. Blend in mashed potatoes.
  4. Pour mashed potatoes into a buttered ovenproof dish and bake in oven around 20 minutes or until heated through. You can also heat in microwave oven.
