Quinoa and Feta Salad
Serves: 6
Ingredients
- 250 ml (1 cup) quinoa
- 500 ml (2 cups) chicken or vegetable broth
- 85 g (3 oz) SKOTIDAKIS feta cheese
- 125 ml (1/2 cup) sliced almonds, toasted
- 250 ml (1 cup) cherry tomatoes, in halves
- 1 red bell pepper, diced
- 1 zucchini, peeled and diced
- 2 green onions, diced
- Basil and Chive Salad Dressing
- 30 ml (2 tbsp) white wine vinegar
- Juice of 1/2 lime
- 60 ml (1/4 cup) + 15 ml (1 tbsp) extra virgin olive oil
- 30 ml (2 tbsp) fresh chive, chopped
- 15 ml (1 tbsp) fresh basil, chopped
- Salt and pepper
Directions
- Rinse quinoa thoroughly and drain. With broth, bring to a boil in a large pot, lower heat and simmer uncovered around 15 minutes or until liquid has been absorbed.
- Let cool, then mix with feta and remaining ingredients, including dressing.
