Quinoa and Feta Salad

Serves: 6

Ingredients

  • 250 ml (1 cup) quinoa
  • 500 ml (2 cups) chicken or vegetable broth
  • 85 g (3 oz) SKOTIDAKIS feta cheese
  • 125 ml (1/2 cup) sliced almonds, toasted
  • 250 ml (1 cup) cherry tomatoes, in halves
  • 1 red bell pepper, diced
  • 1 zucchini, peeled and diced
  • 2 green onions, diced
  • Basil and Chive Salad Dressing
  • 30 ml (2 tbsp) white wine vinegar
  • Juice of 1/2 lime
  • 60 ml (1/4 cup) + 15 ml (1 tbsp) extra virgin olive oil
  • 30 ml (2 tbsp) fresh chive, chopped
  • 15 ml (1 tbsp) fresh basil, chopped
  • Salt and pepper

Directions

  1. Rinse quinoa thoroughly and drain. With broth, bring to a boil in a large pot, lower heat and simmer uncovered around 15 minutes or until liquid has been absorbed.
  2. Let cool, then mix with feta and remaining ingredients, including dressing.
