Summer Fruit Gratin

Serves: 4

Ingredients

  • 250 ml (1 cup) SKOTIDAKIS vanilla Greek yogurt
  • 180 ml (3/4 cup) SKOTIDAKIS ricotta
  • 2 ml (1/2 tsp) lemon zest, finely grated
  • 7 ml (1 1/2 tsp) lemon juice
  • 750 ml (3 cups) your choice of fresh fruit
  • 60 ml (1/4 cup) brown sugar, tightly packed

Directions

  1. Mix Greek yogurt, ricotta, lemon zest and juice in a bowl.
  2. Divide fruit among four ovenproof dishes.
  3. Top fruit with yogurt-ricotta cream and sprinkle with brown sugar.
  4. Transfer plates to a cooking sheet and broil in oven until brown sugar caramelizes (around 5 minutes).
