Summer Fruit Gratin

Ingredients
- 250 ml (1 cup) SKOTIDAKIS vanilla Greek yogurt
- 180 ml (3/4 cup) SKOTIDAKIS ricotta
- 2 ml (1/2 tsp) lemon zest, finely grated
- 7 ml (1 1/2 tsp) lemon juice
- 750 ml (3 cups) your choice of fresh fruit
- 60 ml (1/4 cup) brown sugar, tightly packed
Directions
- Mix Greek yogurt, ricotta, lemon zest and juice in a bowl.
- Divide fruit among four ovenproof dishes.
- Top fruit with yogurt-ricotta cream and sprinkle with brown sugar.
- Transfer plates to a cooking sheet and broil in oven until brown sugar caramelizes (around 5 minutes).
