Ingredients

Cake:

  • 250 g black chocolate
  • 4 eggs
  • 150 g powdered sugar
  • 200 g unbleached flour
  • 100 g unsalted butter
  • 100 g Skotidakis 9% Greek Yogurt

Raspberry coulis:

  • 1 cup fresh raspberries
  • 2 tbsp. brown sugar
  • 2 tbsp. water
  • 1 tbsp. corn starch
  • ½ tbsp. lemon juice

Preparation

Preparing the cakes:
In a small saucepan, melt the butter and add the chocolate. Mix until the chocolate is melted, and set aside. In a large bowl, put all the other ingredients except for the egg whites. Add the ingredients to the melted chocolate and blend with a spatula until smooth. Whisk the egg whites until they form firm peaks. Add the egg whites to the chocolate mixture and mix thoroughly. Put into 8 ramekins and place in oven at 375°F for 15 minutes.

Preparing the raspberry coulis:
In a small saucepan, crush the raspberries and add the sugar, water and corn starch. Cook over low heat for 8 to 10 minutes. Pass the mixture through a sieve to extract the juice and remove the seeds. Add the juice of a lemon wedge and let cool in the fridge for 15 minutes.

Serve with a vanilla ice cream and garnish with a few fresh raspberries. Decorate the plate with the raspberry coulis and drizzle over the cakes.
