
Skotidakis Ricotta is made from whey, a milk by-product resulting from cheese-making. When heated, goats’ milk is
added and the protein particles in the whey fuse together to create the characteristic curd of ricotta, which means, "re-cooked." Ricotta can be eaten as is, like cottage cheese, or served with fresh fruits and vegetables. It is also wonderful for cooking -- in pasta dishes or in baking.
