Quick Chicken Souvlaki Pita with Tzatziki

12 oz boneless skinless chicken breasts 1 tsp grated lemon rind 2 tbsp lemon juice 1 tbsp extra-virgin olive oil 1 tsp dried oregano 1/4 tsp each salt and pepper 4 Flat Pita Bread 1 cup shredded lettuce 1/2 cup each chopped red onion & tomato 1 cup Tzatziki sauce


1. Cut chicken into 1 inch cubes. In large bowl, toss together chicken, lemon rind and juice, oil, oregano, salt and pepper; let stand for 10 minutes to marinate. 2. Alternately thread chicken and onion onto 4 metal skewers. Broil on foil-lined rimmed baking sheet, turning once, until chicken is no longer pink inside, about 10 minutes. While grilling, warm the pitas alongside the skewers. Remove the meat from the skewers onto the pitas. Dress with lettuce, tomato, red onion & a healthy dollop of tzatziki sauce.
